Ingredients
- For 11 gallons of wort (10 G beer):
- 14 lbs Great Western Pale Ale Malt (MASH)
- 6 lbs German Munich (MASH)
- 2 lbs Briess Carapils Malt (MASH)
- 1 lbs Crystal 60L (MASH)
- 1 lbs Wheat Malt (MASH)
- 0.75 lbs Roast Barley (MASH)
- 0.5 lbs Chocolate (MASH)
- 0.5 lbs Peat Smoked Malt (MASH)
- 2 oz Yakima Kent Goldings Whole 5.5% BOIL 60 minutes
Procedure
- Mash Efficiency 65%
- 20' Protein rest at 127F
- 75' Saccrification rest at 158F
- We took 2-3 gal. of first runnings and boiled the heck out
of it to
scorch and caramelize the wort.
