Fermentables
- 22# Hugh Baird pale malt
- 1.5# torrified wheat
- 1.5# Belgian aromatic
- 1# English crystal 75L
- 0.5# Belgian carapils 15L
- 0.5# English chocolate malt
- 2# XLDME
Hops
- 2+ oz Magnum pellets 12.3% = 25 HBU (60 min) (club door-prize)
- 1.5 oz Yakima Kent Goldings 5.9% = 8.85 HBU (10 min)
Other
- approx 1t Irish Moss (10 min)
- English ale yeast (WLP002?) slurry from Oasis
(yes really, at that time Oasis was using some non-1056 yeast)
Procedure
- target mash: 7 G Eldo water @ 150 F for 60 min
- actual mash: 10-12 G water @ 140-190F for 90 min
(problems learning JohnB & Barry's 3-tier)
- collect 6 G of first runnings @ 1075
- add DME, boil to 4+ G @ OG 1120
- collect 6 G of second runnings for a 1045 brown ale (served Jan 2000)
- ferment at Barry's house for a while, serve March 2001
